ICED LEMON TEA

ICED LEMON TEA

(Cold Brewed) 


When you comeback from outside feeling thirsty and wish to have something which really quench your thirst, have some tea. Do not frown! I am not talking about steaming hot cup of chai . I am talking about iced lemon tea, something that is really one of the best answer you would find after you taste it. It is not so hard to make, in fact  You will love it. There is no cooking involved in this method, not even boiling the water :) .

Ingredients-

Water -  500 ml
Tea bags - 2
Sugar - 4 tbs
Lemon juice -  4 tbsp
Citric acid - 1/2tsp
Soda water - 500 ml

Method -

Take 500 ml of water at room temperature in a mason jar or a big jug.
Drop the tea bags in the water holding the other end to the mouth of the jar, close the lid and leave it on kitchen counter for two hours.
After 2 hours discard the tea bags and add sugar, strained lemon juice and  citric acid to the jar and stir till everything is dissolved completly.
Add 500 ml of soda water, mix and close the lid of the jar, chill in the fridge and serve.

ACHARI CHICKEN WINGS

These chicken wings marinated in pickle spices and then grilled in oven ticks all the boxes for a perfect starter. It is super easy to make and tastes really yummy. A must try for all pickle lovers.

INGREDIENTS:

Chicken wings (skinless) -             12 -15
Ginger garlic paste            -             1 tbsp
Lemon juice                        -             2 tbsp
Red chili powder                -             1 tsp
Salt                                        -             as per taste
Curd (thick)                         -             ½  cup
Turmeric  powder               -             ½ tsp
Amchur / mango powder  -             1 tsp
Saunf/ fennel seeds            -             1 tsp
Ajwain                                   -             1 tsp
Kalaunji                                 -             1 tsp
Oil                                           -             2 tbsp




METHOD:

Clean and dry chicken wings with the help of kitchen towel or clean cotton/muslin clothes.
Mix lemon juice, ginger garlic paste, chili powder and salt and rub it over chicken wings and keep aside.

Put  curd, turmeric powder,amchur,  saunf, ajwain, kalaunji and 1 tbsp of oil in a bowl and mix it well.

Now, pour this mixture on chicken wings and mix, cover and keep it in fridge for 20 minutes or more.

Turn on oven to grill mode before putting the chicken.

Arrange chicken wings in a tray and drizzle 1 tbsp of oil and put it on the grill in oven.

Turn it once when it becomes golden on the top. Grill for another 5 minutes or till it becomes golden from both sides.

Serve hot with mint chutney.

BHARWAN KARELA

(Stuffed Bitter Guard)


As a kid I never liked eating karela, the only way my mom got me to eat this is in this recipe. The spicy and tangy stuffing covered in well fried outer layer is a perfect accompaniment of any meal.

Ingredients:-

Karela- 2

Oil- 1tbs+ for frying

Onion- 2 medium size

Ginger-Garlic paste-2 tsp

Coriander powder- 2 tsp

Red chilli powder- 1/2 tsp

Turmuric powder- 1/2 tsp

Saunf (crushed)- 1 tbsp

Amchoor powder- 1 tsp

Salt- as per taste

Method :

Lightly scrape the karelas, wash it and cut each into middle to make two equal pieces. scoop out all seeds from inside, take care not to break the outer shell.

Steam or boil  the karelas in salted water, till half cooked.

Heat 2 table spoon oil in a pan, put in the chopped onion and  fry till translucent, now add ginger-garlic paste and all other spices except amchoor. fry all things together until oil starts to separate.

Add amchoor, salt and seeds of karela, fry for 1-2 minutes and turn off the heat.

Fill the karela with this mixture.

Now heat some oil in a frying pan and shallow fry stuffed karela turn it time to time and make sure to cook from all sides.

Serve hot as side dish with meal.
